250 g. cooked chickpeas
3 Tablespoons Tahini
2 Tablespoons lemon juice
salt to taste
cumin powder

Mix everything in the blender, add olive oil and serve with pitta bread.

Healthy Baked Donuts

Donuts are usually fried, but that's not always good for you, especially if the oil is used over and over again. I made some donuts at home which are TASTY and HEALTHY. I BAKED THEM!

Mix 30 g. of sugar, 1 ts salt, 1 egg, 40 g. butter. Add 400 g flour, then add 2 ts dry yeast and 260 ml warm milk. Let stand for one hour or until  doubled. Cut in pieces and shape into donuts. Place in donut tray. Once risen, bake in the oven for about 18 minutes. Frost when cooled.

Chop one eggplant, put it in a strainer and add salt. After 1 hour, fry it in olive oil. Take out the eggplant and add chopped celery, capers, pine nuts and green olives. When the celery is soft add 5 tablespoons of white vinegar and 1 tablespoon of sugar. Return the eggplant to the pan and mix everything together.

It's best eaten cold.
